Irish Soda Bread

It seems fitting that the first recipe I launch is a family one, just in time for Saint Patrick’s Day. In my family, soda bread is required for every Saint Patrick’s Day. But I didn’t always have the recipe my mom had always made for us, so I was forced to try and find one close to it but I never really succeeded.

I’m grateful to once again have the recipe to make for this year’s holiday.

This recipe is extra sweet, and extra soft, almost cake-like. It’s what I grew up with, and it’s the only soda bread I will eat.

  • 2 1/2 cups AP flour

  • 1/2 cup granulated sugar

  • 1 1/2 tsp baking powder

  • 3/4 tsp salt

  • 1/2 tsp baking soda

Pulse in food processor until well mixed. Add in:

  • 1/2 cup unsalted butter, cut into cubes

Pulse until mixture resembles coarse crumbs. Transfer to mixing bowl. Whisk together:

  • 1 large egg

  • 1 1/4 cup buttermilk

  • 1/4 cup sour cream

Add into dry ingredients and mix just until combined.

Pour into greased 9” round cake pan, bake at 350 degrees for 40-45 minutes, until a toothpick comes out clean. I like mine a little extra golden brown because I grease my tin with butter so the outside crust is super delicious.

OPTIONAL:

You can pulse the dry ingredients and butter together for longer, getting a finer texture, for a more spongy cake feel after baking.
