Black Bean Soup (Vegan Optional)
I like to blend this until completely smooth and then eat it with carnitas. So tasty.
In a slow cooker, combine:
1 pound dried black beans (soaked overnight) OR 4 cans black beans, rinsed
4 cups chicken broth (vegetable for vegan)
1 onion, chopped
1 red bell pepper, chopped
3 stalks celery, chopped
2 large carrots, chopped
1 cup salsa
2 jalapenos or 1 small can diced green chiles
4 tsp minced garlic, 6-8 cloves
1 heaping tablespoon chile powder
2 teaspoons ground cumin
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper (less for milder spice)
1/2 teaspoon paprika
Cook for 6 hours on high or 8 on low. Once done, eat as is if preferred, though I like to blend it until smooth.
