Black Bean Soup (Vegan Optional)

I like to blend this until completely smooth and then eat it with carnitas. So tasty.

In a slow cooker, combine:

  • 1 pound dried black beans (soaked overnight) OR 4 cans black beans, rinsed

  • 4 cups chicken broth (vegetable for vegan)

  • 1 onion, chopped

  • 1 red bell pepper, chopped

  • 3 stalks celery, chopped

  • 2 large carrots, chopped

  • 1 cup salsa

  • 2 jalapenos or 1 small can diced green chiles

  • 4 tsp minced garlic, 6-8 cloves

  • 1 heaping tablespoon chile powder

  • 2 teaspoons ground cumin

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 1/2 teaspoon cayenne pepper (less for milder spice)

  • 1/2 teaspoon paprika

Cook for 6 hours on high or 8 on low. Once done, eat as is if preferred, though I like to blend it until smooth.
