Honey Cardamom Marshmallows
These are super tasty in hot chocolate or coffee, and they make super unique s’mores.
In the bowl of a stand mixer, pour 1 and 1/2 packets of powdered gelatin into 1/4 cup of water. Let sit.
In a saucepan, mix 1/4 cup water with 3/4 cup sugar, 1/2 cup honey, and 1/8 teaspoon salt. Cook over medium heat until mixture reaches 240 degrees Fahrenheit and then immediately remove from heat.
Turn stand mixer on low speed with whisk attachment and slowly pour the syrup mixture down the side of the bowl. Once syrup has been added, increase mixer speed to high and whip until it thickens and cools to lukewarm, about 10 minutes.
Then add 1/2 teaspoon vanilla extract, and 1/8 teaspoon ground cardamom. Use 1/4 teaspoon if you like a stronger flavor, but be careful, as it can become soapy if too much is used. Whip on high again for another 3 minutes.
Coat the bottom and sides of an 8 x 8 glass pan with a 1/2 & 1/2 mixture of corn starch and powdered sugar. Pour the marshmallow into the pan, spreading evenly with a greased spatula. Coat the top with more of the powdered sugar/corn starch mixture. Let sit for at least 4 hours or up to overnight.
When you’re ready to cut them, turn the marshmallow out onto a board coated with powdered sugar/corn starch and slice into strips, then cubes, using a pizza cutter. Coat all sides with the powder mixture and store in an airtight container or ziploc bag.
